Pimms Sorbet
With the weather warming up and the sun finally appearing what could be more appropriate than a Pimms Sorbet in the garden. If you cannot find blood orange juice then any orange juice will do.
Ingredients
500ml Blood orange juice
225g granulated sugar
150ml Pimms
juice of 1/2 lemon
120ml water
10 mint leaves, chopped
85g strawberries, chopped
TO SERVE
diced strawberry
diced cucumber
orange segments
shredded mint
Method
- Warm the orange juice, add the sugar and dissolve over a gentle heat.
- Add the Pimms, lemon juice and water.
- Using an ice cream machine – add the mint leaves, tip into the ice cream machine and churn until semi-frozen. Add the strawberries and freeze until firm.
- Making by hand – Semi-freeze the Pimms mixture in a shallow plastic box, then whisk the mixture with a whisk to break up the crystals. Stir in the mint leaves and strawberries and freeze until firm.
- Serve with the diced fruit, orange and mint.

Kids Halloween Cooking

This course is a fantastic seasonal treat to keep little (and not so little!) ones entertained throughout the school holidays.
