Just back from your holiday in Spain? Why not recreate those delicious flavours of seafood paella and imagine you are still by the Mediterranean Sea!
Classic Paella
150g chorizo, diced
2 TBSP oil
500g chicken thighs
1 Onion, diced
2 cloves garlic, crushed
250g Paella rice
2 tsp smoked paprika
1 small glass of white wine
1 red pepper, diced
600ml vegetable stock
3 tomatoes, quartered
Handful of raw prawns, shell on
Handful of Mussels, in shell
Juice of 1/2 lemon
small bunch of parsley, chopped
Method
- Fry the chorizo in the oil till cooked through and released it’s flavours. Remove.
- Add the chicken and fry in the chorizo oil till coloured but not cooked through. Remove.
- Add the onion and garlic and cook gently till soft. Add the rice and coat in the hot oil. Add the smoked paprika.
- Pour in the wine and allow it to be absorbed. Add the stock, pepper, chorizo and chicken to the pan and cook covered for 10 minutes.
- Add the tomatoes and cook for a further 5 minutes.
- Add the shellfish and cook for a further 5 minutes covered.
- Stir in the lemon juice and chopped herbs and serve with crusty bread.

Kids Halloween Cooking

This course is a fantastic seasonal treat to keep little (and not so little!) ones entertained throughout the school holidays. The course is very hands on and everyone will take home not only lots of delicious tasting goodies but also some new found cooking skills.
