This gorgeous cake works just as well as a light dessert after a BBQ. Serve it with fresh blueberries and creme fraiche for a real show stopper pudding. The cake is naturally gluten free so perfect for everyone!
CITRUS POLENTA CAKE
125g Ricotta Cheese
70g butter, softened
70g ground almonds
70g caster sugar
3 eggs separated
zest and juice of ½ lemon
40g fresh blueberries
15g fine polenta
METHOD
- Preheat the oven to gas mark 4 / 180C and line 4 ramekins with butter and a disc of silicone paper at the base.
- Place the ricotta and the butter into a large bowl and beat together. Add the sugar and egg yolks mixing well and fold in the almonds and the zest and juice.
- Whisk egg whites till medium stiff peak. Add the polenta to the yolk mix and then fold in the whites very carefully.
- Add the blueberries to the mix and divide the mixture between the ramekins.
- Bake for 20-25 minutes. Allow to cool in the ramekin before turning out and serving.
