Chocolate Beetroot Muffins

Now I know what you’re thinking – how do chocolate and beetroot work together?! Well think Red Velvet Cake but without the artificial colourings! These little beauties have a wonderful texture and colour but most importantly taste out of this world.

CHOCOLATE AND BEETROOT MUFFINS

300g self-raising flour

30g cocoa powder

½ tsp baking powder

150g cooked beetroot (not in vinegar!!)

50g chocolate chips

100g sugar

2 eggs

250ml milk

100ml vegetable oil

 

 

METHOD

 

  1. Place 12 muffin cases in the tin and preheat the oven to 190C/ mk 5.
  2. Sieve together the flour, self raising flour and baking powder into a large bowl.
  3. Place the beetroot in another bowl with the milk and blitz until a smooth liquid is produced.
  4. Add the chocolate chips and the sugar to the flour and stir well.
  5. Make a well in the flour and add the beetroot, egg and oil. Mix until there are no lumps of flour and spoon into the cases.
  6. Bake for 20-25 minutes until a skewer comes out clean.

Kids Halloween Cooking

Kids Halloween Cooking Class – come and join us for another great, fun filled cooking adventure as we get ready for Autumn and all things Spookatcular!! This course is a fantastic seasonal treat to keep little (and not so little!) ones entertained throughout the school holidays. The course is very hands on and everyone will take home not only lots of delicious tasting goodies but also some new found cooking skills. Mums, Dads, Carers, Aunties, Uncles and Grandparents are very welcome to attend with those mini chefs under 10 years old whilst those budding chefs over 10 can join the class on their own or with friends. A great idea for school holiday fun and also getting a few new recipes under your belt before Halloween arrives! Typical areas which may be covered – Spooky Spider Pizzas, Halloween Cookies, Wiggly Pastry Snakes, Pumpkin Patch Brownies and Slime Cupcakes.
