With lovely warm weather on our doorstep this week bring another touch of the Mediterranean home with this delicious stuffed chicken recipe.
Mediterranean Stuffed Chicken Breasts
4 chicken breasts, skin on
1/2 red onion, diced
20g sunblush tomatoes, chopped
30g breadcrumbs
1 TBSP red pesto
4 black olives, chopped
1 slice of roasted red pepper, chopped
1 TBSP basil, chopped
salt and pepper
Method
- Preheat the oven to 200’C or gas mark 6.
- Sweat the onion in a little oil from the jar of sunblush tomatoes until soft.
- Whiz the breadcrumbs, softened onion, tomatoes, pesto, olives and pepper in a food processor. Add any extra oil to adjust the consistency.
- Add the basil and season well.
- Release the skin a little from the chicken breast and push the stuffing down between the skin and the meat. Smooth well.
- Brush a little more oil over the skin, season again and roast for 20 minutes or until the center of the chicken is piping hot.

Kids Halloween Cooking
