These delicious tarts are the perfect summer first course. Change to use whatever Antipasti you have and swap the Goat’s Cheese for Mozzarella or even Gorgonzola.
Polenta Tarts with Mediterranean Vegetables
170g plain flour
pinch of salt
85g polenta
140g butter
30g parmesan
1 egg, beaten
marinated peppers
1 x 400g jar of artichoke hearts
1 jar sundried tomatoes
200g goat’s cheese, crumbled
4 TBSP olive oil
METHOD
- Preheat the oven to 200’C/gas mark 6.
- Make the pastry. Sift the flour, salt and polenta into a bowl. Rub in the butter until the mixture resembles coarse bread crumbs. Add the Parmesan and just enough egg to bind the pastry.
- Roll the pastry into 4 circles about the thickness of a £1 coin. Place on a baking sheet and chill for 15 minutes.
- Bake the pastry for 15 minutes and leave to cool.
- Drain the vegetables and slice.
- Arrange the vegetables on top of the tarts and sprinkle over the goats cheese. Drizzle with olive oil and bake for a further 5 minutes.

Kids Halloween Cooking
