Sausage Pasta Bake

A simple but tasty midweek family dinner. Change up the vegetables to whatever you have in the fridge and you can lower the fat by swapping to lower fat sausages and cheese. This will become a family favourite!

PASTA SAUSAGE BAKE

6 sausages

1 large red onion

2 cloves garlic

1 red pepper

1 courgette

1 small aubergine

250g broccoli

250g pasta (penne)

2 TBSP margarine

2 TBSP olive oil

100g cheddar, grated

 

For the sauce:

40g margarine

40g flour

pinch mustard powder

1 pint milk

 

METHOD

  1. Preheat the oven to 190’C and place 2 pans of water on to boil.
  2. Place the sausages in the oven and cook for 15 minutes turning often until evenly browned and thoroughly cooked.
  3. Whilst they are cooking, chop all the vegetables.
  4. Place the pasta in 1 of the pans of water and cook for 10 minutes.
  5. Cook the broccoli in 1 of the pans of water for about 4 minutes. Drain.
  6. Melt the butter and oil together in a large pan and gently fry all the remaining vegetables until softening.
  7. Check the sausages. If they are done, cut into small chunks.
  8. Make the white sauce – melt the margarine in a medium pan and add the flour and mustard powder. Cook for 1 minute. Remove the pan from the heat and slowly add the milk. Return to the heat and cook till boiling and thickened. Add ¾ of the cheese.
  9. Mix all the ingredients together and tip into an oven proof dish. Sprinkle over the remaining cheese.
  10. When wanting to eat – reheat the dish in 180C/gas mark 4 oven for 20-30 minutes or until piping hot. Place under the grill if more colour is required.

Kids Halloween Cooking

Kids Halloween Cooking Class – come and join us for another great, fun filled cooking adventure as we get ready for Autumn and all things Spookatcular!! This course is a fantastic seasonal treat to keep little (and not so little!) ones entertained throughout the school holidays.
